Peanut Chicken Noodles
These cold noodles are a summer favorite. The Jade Sichuan Peanut Sauce is what really makes it happen. You will find that you can and will want to eat 2-3 times a typical portion before feeling satiated, which is a strange unsolved mystery.
Ingredients
- 1 pound spaghetti or linguini
- 1 pound boiled chicked, hand-shredded into little strips
- Jade peanut sauce
- Scallions and/or cucumbers
Steps
- Boil the chicken and set aside to cool
- In the same pot with all the nice chicken water, boil the pasta.
- Put the pasta in a large bowl and add enough Jade to keep it from sticking.
- Shred the chicken as soon as your hands can tolerate. This is a labor-intensive task. If you use forks to shred instead of just your hands, that is acceptable and much faster, but the hand-shredded way is best.
- Put the shredded chicken in a bowl with Jade so it can soak up all the sauce.
- Mix the chicken into the pasta, cover, and refrigerate.
- Serve with lots of chopped scallions and/or cold cucumber strips made with a julienne peeler. Yummmm.
