Beef Stroganoff
Classic comfort meal. Simmering the beef takes at least 90mins. Plan accordingly.
Ingredients
- Sirloin, 1/2 lb per person
- Beef stock, 1 quart is usually enough to cover the beef while simmering and for the flour slurry
- All-purpose flour
- Sliced mushrooms
- Chopped onions
- Butter
- Sour cream
- Egg noodles or rice
Steps
- In a large braiser pan, sauté chopped onions in butter until wilted. Add lots of sliced mushrooms and sauté until their liquid is mostly gone. Set aside on a plate.
- In batches in the same large braiser pan, brown the sliced sirloin on all sides using new butter.
- Return all onions, mushrooms, and beef to the pan. Add enough beef stock to submerge. Cover with lid and simmer on low for 90mins or more. Add more beef stock if it boils out and the beef is no longer submerged.
- Meanwhile, mix enough flour with reserved beef stock to make a slurry. Stir into pan after simmer is done. Cook for at least 5mins more, stirring to thicken.
- Turn off heat and add a cup or so of sour cream. Stir until fully incorporated.
- Serve on egg noodles or rice.
